Ana Maria’s Bread Pudding
1 loaf of challah bread
1 loaf of good quality whole wheat bread
1/2 gallon of whole milk, coconut milk, soy, almond or any milk of your choice
1 T of cinnamon
1 T of vanilla
1/2 cup of molasses
Preheat oven to 350 degrees. Grease two 13” x 9”pans.
Cut the breads in small pieces in large enough bowl to hold the two loaves of bread.
In a separate large bowl mix the 8 eggs very well before adding the milk, molasses, vanilla and cinnamon.
Mix the wet ingredients very well (you can do this in a blender if you want). Add the wet ingredients to the breads and let it sit for 15 minutes (or overnight if you are not ready to bake it right away).
Divide the mixture into the two pans and bake for 40 to 45 minutes.
You can serve it with a little of molasses on top for more sweetness or maple syrup. The bread pudding is not very sweet on purpose; you can add more to your liking once it is done and you are ready to eat.
